Konishi Brewery owns the oldest brand of sake in Japan, Shirayuki. The relationship with beer began in 1985 when the local city of Itami signed an international sister city affiliation with the city of Hasselt in Belgium. At the time, there was almost only one type of beer in Japan, Pilsner. However, in Belgium, the home of beer, there are more than 1,000 kinds of beer. We wondered if we could brew a beer that only a sake brewery could produce, combining the brewing techniques of Belgian beer with the fermentation and other techniques of Japanese sake brewing. We want to convey to Japan and the world a new way to enjoy beer with "JAPAN ALE," a beer that only we can make. KONISHI Beer has been brewed with this in mind. We would be happy if this taste and our thoughts could reach you as well.
The tradition of sake brewing produces a soft aftertaste.
While the aroma of beer is usually created by malt and hops, KONISHI Beer places importance on the aroma created by fermentation. This gives the beer not only a sharp taste but also a lingering aftertaste. We also use our unique experience in various processes, such as applying the "Kaibo" used for brewing sake to stir the malt to suppress the unpleasant taste of malted barley.
We create an environment where the yeast is happy.
During the cooling and fermentation process after brewing, the conventional method of maintaining a constant state of fermentation through stable cooling is often seen. In our case, however, we try not to suppress the yeast activity as much as possible, and we carefully control the temperature so that we can draw out natural fermentation. We listen to the voice of the yeast and do what makes them happy. That is our motto.

KONISHI ITAMI BEER Japan Ale Gold 2025 is a spiced beer with a rich, sweet aroma of orange peel and coriander, perfectly matched with the aroma created by the yeast. The use of malted and polished wheat gives it a refreshing taste.
